    This course provides real workplace skills at an operational and supervisory level by giving students the skills needed to work as qualified chefs as well as incorporating kitchen management subjects. The course covers everything from pastry making and filleting fish, to devising menus and cooking specialist dishes from recipes.

    This course builds on the skills gained in the Certificate III qualification and further develops skills and knowledge required for supervisory positions. Graduates of this program may gain employment as pastry cooks and supervisory roles.
