Alejandro studied Advanced Diploma of Hospitality Management (Commercial Cookery)

"My name is Alejandro Dante Saravia Leon and I have a passion for cooking. I have a dream to become one of the best chefs in Peru and hopefully internationally. I came to Australia with an intention to expose and introduce Peruvian Food to the Australian dining scene. I have done my culinary schooling in Le Cordon Bleu in Peru. However, I wanted to develop my chef skills and thus enrolled in Carrick Institute of Education because it had a very good reputation in Australia.

Initially I didn't know there was a service to assist students with resumes/cover letters like Carrick Recruitment but I soon found out and went to Natalie Lee to get introduced to the Fine Dining scene in Australia. Natalie assisted in developing my resume and cover letter and then organised an interview for me at Pier Restaurant with Head Chef: Grant King. Through my hard work during my trial shift at Pier Restaurant, Grant offered me a position in 2009. Unfortunately I was unable to accept because I have been busy with organising my "Taste of Peru" project.

During my studies at Carrick I have been working hard in developing an authentic but modern "taste of Peru" to showcase in April and introduce Peruvian Cuisine to the Australian fine dining scene. To my credit, I believe I am one of the first pioneers to introduce Peruvian food to Australia."
