Greg Francis, Kitchen Operations Coordinator, Melbourne

My name is Greg Francis and will have been with Carrick education 6 years in April 2010. I first started as a Commercial Cookery teacher in 2004 was promoted to senior Teacher in 2005 and then to my current position as Kitchen Operations Coordinator in 2006. This is a dream job for a Chef, I have under my charge as many as 30 Chef Teachers many of who are world class Chefs that Im secretly in awe of (but dont tell them that – Chefs and egos!)

My main job is to order all the food for the kitchen classes, but I like to get out into the kitchens to assist the teachers and students in any way I can.

My specialty when I was working as a Chef was the Culinary arts and I especially love week nine as this is when teachers and students let their artistic sides run loose!

Highlights of my time at Carrick have been the Carrick team winning the international Cooking Competition in 2009, a performance we hope to repeat with a fresh team early next year.

Another highlight is being able to help out a few charities over the past year. We have been involved with Second Bite food donations since 2006 and this year we helped out Blaze Aid after the fires in February.

Each month we got together teacher and student volunteers to cook up about 400– 500 meals which helped to feed the volunteers fixing the fences burnt down in the Kilmore region.
